~ CHOCOLATE CREAM PIE
Bake a 9" pie shell in the regular oven.
Combine in a 1 1/2 qt microwave dish:
1 cup sugar
3 tbsp cornstarch
1/4 tsp salt
2 cups milk
~Cook in microwave oven 3 minutes ~
~Stir
~ Cook 3 minutes more. (it will depend on how hot your microwave oven cooks as to how many minutes you cook at this point -
I have had a microwave that I could cook it for the second set of 3 more minutes and it works fine, but I have a newer microwave now and it cooks much faster.
It will be best if you cook and stir in 1 minutes intervals and check to see how much it is setting up after each minute.
This is what I got with the seceond set of 3 minutes.
~I started over at this point . . . I only cooked it 2 minutes the second time and it worked much better!)
Add 3 beaten egg yolks
Cook 1 minute longer
Add 1 tsp vanilla
2 Tbsp butter
1 oz (2 squares) of unsweetened chocolate broken into small pieces
Cool and pour in baked pie shell.
Top with meringue or whipped cream.
