Jana Francis is my youngest daughter. She is currently working on her Degree in Nuclear Medicine. This next Saturday, April 26, she will be participating in a "Making Strides Against Breast Cancer Walk", in Albuquerque NM.
Jana has asked me to Share the following information with you ~
Dear Coworkers, Friends and Family, This year, hundreds of thousands of people will hear the words, “You have breast cancer,” and there’s a good chance that some of them will be people we know and love. I have chosen to fight back against this disease and help make a difference by participating in the American Cancer Society Making Strides Against Breast Cancer walk, and I hope you will join me. Making Strides Against Breast Cancer is our opportunity to honor and celebrate breast cancer survivors, educate women about early detection and prevention, and raise money to fund lifesaving research and support programs to help fight breast cancer. But Making Strides is more than just the name of a walk, it describes the amazing progress we can make if we work together to defeat this disease. Below is a link to my personal page. ~ STRAWBERRY BREAD WITH SPREAD ~
I have been thinking about this Recipe for several weeks now. I thought it would be Fun to use as a "PINK SATURDAY" Post.
Believe me, IT IS ABSOLUTELY DELICIOUS ! ! !
I was at my Mother's house last weekend. We were going through some of her things, and we came across this large Loaf Pan.
I remember using it to Bake Banana Bread years ago as I was growing up. I never purchased a long pan like this after I married, but there have been many times that I have wished that I had one.
WELL, . . .
just out of the blue, she offered the pan to me!
I was so excited to get it!
I put it right to use.
Jana and 2 of her Girlfriends are on their way to the Wedding of one of their ex-Basketball Teammates in Nebraska this weekend.
They came as far as our house Thursday night to get a few hours of rest. They were back on the road (14 hour trip one way from Albuquerque) early Friday morning.
I was trying to think of something that I could prepare for them for Breakfast that would be Quick and Delicious, . .
SO
STRAWBERRY BREAD was my first thought.
This is another one of my Mother's Recipes. She is not only a GREAT Cook, but also a Wonderful Seamstress!
I hope you enjoy this Recipe ~
STRAWBERRY BREAD WITH SPREAD
3 cups Flour
1 tsp Baking Soda
1 tsp Cinnamon
2 cups Sugar
1 tsp Salt
2 (10 oz) pkg. Frozen Strawberries, thawed
1 1/4 cup Cooking Oil
4 Eggs (well beaten)
1 tsp Red Food Coloring
Reserve 1/2 cup Strawberry Juice.
~ Mix all dry ingredients together.
~ Make a hole in the center of the mixture. Pour strawberries, oil and eggs into the hole.
~ Mix until all ingredients are thoroughly combined.
~ Add red food coloring.
~ Pour into 2 small greased and floured 9 x 5 x 2 in loaf pans, (or one large loaf pan).
~ Bake at 350 degrees for 1 hour.
~ Cool thoroughly.
~ STRAWBERRY SPREAD ~
Place 1/2 cup strawberry juice and 1 (8 oz) package cream cheese (softened) in a blender container. Process until spreading consistency.
Spread on cooled bead and make sandwiches.
Yields approximately 30 Sandwiches.
(Freeze bread first and it slices better. Slice thin.)
